Guinness and Molasses Cake
2 cups white flour
1 cup Guinness
1 cup molasses
1/2 cup sugar
1/3 cup unsalted butter, softened
2 teaspoons cinnamon
1 teaspoon baking soda
a pinch of salt
Preheat the oven at 350˚.
Mix the baking soda in the Guinness. Let rest for 5 minutes.
Whisk together the butter and sugar until smooth.
Add the Guinness, molasses, egg, cinnamon and salt.
Stiff in the flour a bit at a time, whisking constantly.
Butter a 8×8 mold and pour in the mixture.
Cook for 35-40 minutes. Leave to cool at least 15 minutes. Top with whipped cream and Baileys!
