Cornmeal and Sundried Tomato Bread

I found an interesting recipe while trying to find recipes for my bread machine. Well, I was wanting to make some yummy bread using the machine and didn’t know where to turn. So, I googled around a bit and found an interesting recipe. But I didn’t have all the ingredients for that exact one, but it got me thinking of something really fun. Which isn’t always a good thing since some of my grand creations aren’t exactly edible…If you catch my drift!
The recipe was for a Cranberry and Cornmeal bread but when I started making it, I only had one cup of bread flour. In my cupboard I had corn meal and corn bread mix. Hmmmm. Which is odd since I don’t like or generally buy any cake mixes or bread mixes. If you know what’s in them, most folks would not buy them. So, I had to make do and while making due (where on earth did we get that expression???? I ask…… yeah I know I know, but type it out see what happens) swapped out the cranberries for Sun dried tomatoes and used the mix for the last 3/4 cup of bread flour and 1 1/4 cups of A/P flour. ……You still with me?

Making bread with molasses always makes me think I am eating more healthy as it makes it a heavy more dense bread. I was getting very excited about this recipe……which I admit, I don’t get excited about cooking. Happy, yes.

Put the ingredients into your machine as it instructs. But here is how my machine worked this newfangled recipe:

1 cup plus 1 tablespoon water
3 tablespoons molasses or honey (I  used molasses…YES)
2 tablespoons butter or margarine, softened
1 cup bread flour, 1 3/4 cup AP Flour
2/3 cup cornmeal
1 1/2 teaspoons salt
2 1/4 teaspoons bread machine yeast
1/2 cup sun dried tomatoes
Measure carefully, placing all ingredients except cranberries in bread machine pan in the order recommended by the manufacturer. Add cranberries at the Raisin/Nut signal or 5 to 10 minutes before last kneading cycle ends.
Select Basic Cycle. Use Light crust color. Remove from machine as soon as the cycle is complete.

Hearty corn, tangy cranberries and a touch of molasses make this the perfect addition to breakfast, lunch or supper! From eatbetteramerica.

And here is what I made with that delicious bread………and devoured it! It was really great and it tasted super healthy. I have to admit, this takes the cake. We’re talking a whole lotta love going on here in this sandwich!! WHOLE lotta love!! ;-)
